Cupcake Batter:
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, room temp
1 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1/2 cup whole milk
Coffee Syrup:
1/2 cup brewed espresso or strong coffee
2 tbsp coffee liqueur (optional)
2 tbsp granulated sugar
Mascarpone Frosting:
8 oz mascarpone cheese, cold
1 cup heavy cream, cold
1/2 cup powdered sugar
1 tsp vanilla extract
Garnish:
Unsweetened cocoa powder
Chocolate-covered espresso beans (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk flour, baking powder, and salt in a bowl.
- In a large bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Mix in dry ingredients and milk, alternating. Don’t overmix.
- Divide batter into liners (2/3 full). Bake 18-20 minutes. Cool completely.
- Stir coffee, sugar, and liqueur. Brush cooled cupcakes with syrup.
- Beat mascarpone, cream, powdered sugar, and vanilla to stiff peaks.
- Pipe frosting on cupcakes. Dust with cocoa. Top with espresso beans.
