1 lb ground beef (or ground turkey)

1 packet taco seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, canned, or frozen)

1 cup salsa (your preferred level of heat)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 bag tortilla chips, slightly crushed

1/2 cup sliced black olives

1 large avocado, diced

1 cup chopped tomatoes

1/4 cup fresh cilantro, chopped

Sour cream (optional, for serving)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  3. Add taco seasoning and 1/4 cup water to the beef. Stir and simmer for 3–4 minutes.
  4. Mix in the black beans, corn, and salsa. Cook for 2–3 more minutes.
  5. Spread crushed tortilla chips in the bottom of a greased 9×13-inch baking dish.
  6. Spoon the beef mixture over the chips and spread evenly.
  7. Top with shredded cheddar and Monterey Jack cheeses.
  8. Bake for 15–20 minutes until cheese is melted and bubbly.
  9. Remove from oven and top with avocado, tomatoes, olives, and cilantro.
