1 tbsp olive oil (if sausage is lean)

1 small yellow onion, diced

2 carrots, chopped

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp crushed red pepper flakes (optional)

4 cups chicken broth

1 cup heavy cream

1 lb potato gnocchi

3 cups baby spinach, chopped

Salt and black pepper, to taste

Grated Parmesan cheese, optional


Instructions

  1. In a large pot over medium heat, brown the sausage. Drain any excess grease.
  2. Add onion and carrots. Sauté for 5-6 minutes. Stir in garlic, seasoning, and red pepper flakes.
  3. Pour in chicken broth. Bring to a boil, then reduce and simmer for 10 minutes.
  4. Stir in gnocchi. Cook until they float, about 3-4 minutes.
  5. Lower heat and add cream and spinach. Let spinach wilt.
  6. Season with salt and pepper. Serve hot with Parmesan if desired.
