1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp smoked paprika

8 corn tortillas
2 cups red enchilada sauce
1 1/2 cups shredded Mexican cheese blend
Fresh cilantro, chopped (for garnish)
1 tbsp vegetable oil (for softening tortillas)
Sour cream (optional, for serving)
Instructions
- Heat a large skillet over medium heat. Cook ground beef until browned. Add onion and cook until softened. Stir in garlic and seasonings. Remove from heat.
- Lightly fry each tortilla in oil for about 10 seconds per side. Drain on paper towels.
