1 small onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

2 cups shredded cheddar cheese (divided)

Salt and pepper to taste

1 bag (about 32 oz) frozen tater tots

Fresh chopped chives (optional, for garnish)


Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Drain fat.
  2. Add chopped onion and garlic; sauté until translucent (about 3–4 minutes).
  3. Stir in cream of mushroom soup, sour cream, peas, and carrots. Season with salt and pepper. Simmer 5 minutes.
  4. Turn off heat and stir in 1 cup of shredded cheddar cheese.
  5. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
