1 cup pineapple chunks (fresh or canned in juice)
2 tablespoons olive oil
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
Salt and pepper to taste
Fresh chopped cilantro or mint (optional garnish)
Instructions
- Make the marinade: In a bowl, whisk together olive oil, soy sauce, honey, vinegar, paprika, garlic powder, cayenne, salt, and pepper. Reserve half for basting.
- Marinate the chicken: Pour the other half over the chicken in a resealable bag or shallow dish. Marinate for at least 30 minutes.
- Grill the chicken: Preheat your grill or grill pan to medium-high. Grill chicken 6–7 minutes per side or until cooked through (165°F).
- Caramelize the fruit: Grill or pan-warm the mango and pineapple until lightly golden.
- Finish and serve: Baste chicken with reserved marinade during last few minutes of grilling. Top with grilled fruit and garnish.
