6 bone-in, skin-on chicken thighs

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

1 tablespoon unsalted butter

8 oz (225g) cremini or white mushrooms, sliced

4 garlic cloves, minced

1/2 cup low-sodium chicken broth

1 cup heavy cream

1/2 teaspoon Italian seasoning (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken skin-side down until golden and crispy, about 5–6 minutes per side. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add butter and sauté mushrooms until golden, about 5–6 minutes.
  4. Add minced garlic and cook for 1–2 minutes until fragrant.
  5. Pour in chicken broth, scraping up any browned bits. Let simmer for 2 minutes.
  6. Stir in heavy cream and Italian seasoning. Let the sauce thicken for 3–5 minutes.
  7. Return chicken to the pan, spoon some sauce over it, and simmer on low for 15–20 minutes, or until chicken is cooked through.
