1 lb (450g) shrimp, peeled and deveined
1 tablespoon olive oil
Salt and black pepper to taste

1 cucumber, diced
1 cup cherry tomatoes, halved

1 avocado, diced (optional)
Fresh parsley or cilantro, chopped
