Ingredients

Scale

For the Chicken Gravy:

2 cups cooked shredded chicken

2 tbsp unsalted butter

1 small onion, finely chopped

2 garlic cloves, minced

2 tbsp all-purpose flour

2 cups low sodium chicken broth

1/2 tsp black pepper

1/2 tsp dried thyme (optional)

Salt to taste

Fresh parsley (for garnish)

For the Mashed Potatoes:

4 medium potatoes (Yukon Gold or Russet), peeled and cubed

1/2 cup warm milk

3 tbsp unsalted butter

Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water for 15–20 minutes, until fork-tender. Drain and mash with milk, butter, salt, and pepper until smooth and creamy. Cover and set aside.
  2. Melt butter in a skillet over medium heat. Add chopped onions and sauté until soft, about 5 minutes. Add garlic and cook for 30 seconds.
  3. Stir in flour and cook for 1–2 minutes to create a roux. Slowly whisk in chicken broth until smooth.
  4. Simmer the gravy for 5–7 minutes until thickened. Season with pepper, salt, and thyme if using.
  5. Add shredded chicken to the gravy and stir. Let simmer for 5 more minutes to absorb the flavor.
  6. Serve by spooning chicken and gravy over a generous mound of mashed potatoes. Garnish with fresh parsley if desired.
