1 lb (450 g) firm white fish fillets (cod, halibut, or tilapia), cut into chunks

2 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 can (14 oz) diced tomatoes

2 cups fish or vegetable stock

1/2 cup black olives, sliced (optional)

1 tbsp tomato paste

1 tsp smoked paprika

1/2 tsp chili flakes (optional)

Salt and freshly ground black pepper to taste

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until soft.
  2. Stir in garlic and cook for another 30 seconds.
  3. Add tomato paste, paprika, and chili flakes; stir to combine.
  4. Pour in diced tomatoes and stock. Bring to a simmer.
  5. Add olives, salt, and pepper. Simmer uncovered for 10–12 minutes.
  6. Add fish chunks carefully. Simmer for 5–6 minutes until the fish is cooked through.
  7. Stir in lemon juice and adjust seasoning if needed.
  8. Garnish with parsley and serve hot.
