12 frozen potstickers (vegetable, chicken, or pork)

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

3 medium carrots, diced

2 celery stalks, diced

1 cup green peas (fresh or frozen)

6 cups chicken or vegetable broth

2 tablespoons soy sauce

1 teaspoon rice vinegar

Salt and pepper to taste

2 green onions, chopped

Fresh cilantro or parsley for garnish


Instructions

  1. Heat vegetable oil in a skillet over medium heat. Add frozen potstickers flat-side down. Fry until golden (2-3 minutes), then add 1/4 cup water, cover, and steam for 5-6 minutes. Remove from skillet.
  2. In a large pot, heat sesame oil. Sauté diced onion, garlic, and ginger for 3 minutes.
  3. Add carrots and celery; cook 5 minutes more. Pour in broth, soy sauce, and rice vinegar. Simmer for 10 minutes.
  4. Stir in green peas. Add cooked potstickers to the pot and heat for 3-4 minutes.
  5. Season with salt and pepper. Ladle into bowls and garnish with green onions and herbs.
