- 1 medium fresh pineapple, peeled, cored, and diced
- 1 1/2 cups granulated sugar
- 3/4 cup apple cider vinegar
- 1 1/2 tsp red pepper flakes (adjust to taste)
- 1/2 tsp ground ginger
- Fresh mint leaves (optional, for garnish)
Instructions
- Prepare the pineapple by peeling, coring, and cutting it into small chunks. Set aside.
- In a medium saucepan, combine the sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
- Add the pineapple chunks to the boiling syrup. Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally.
- Remove the saucepan from heat and let it cool for about 30 minutes. Stir in fresh mint leaves if desired.
- Transfer the mixture, including the syrup, into sterilized jars. Seal tightly and let it rest at least 24 hours in the refrigerator to allow flavors to meld.
- Serve as a topping for burgers, tacos, or grilled meats, or enjoy it straight from the jar!

- Adjust the heat level by increasing or decreasing the amount of red pepper flakes.
