  • 1 medium fresh pineapple, peeled, cored, and diced
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp ground ginger
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the pineapple by peeling, coring, and cutting it into small chunks. Set aside.
  2. In a medium saucepan, combine the sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
  3. Add the pineapple chunks to the boiling syrup. Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally.
  4. Remove the saucepan from heat and let it cool for about 30 minutes. Stir in fresh mint leaves if desired.
  5. Transfer the mixture, including the syrup, into sterilized jars. Seal tightly and let it rest at least 24 hours in the refrigerator to allow flavors to meld.
  6. Serve as a topping for burgers, tacos, or grilled meats, or enjoy it straight from the jar!

Notes

  • Adjust the heat level by increasing or decreasing the amount of red pepper flakes.
  • Ensure jars are sterilized to extend shelf life.
  • Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
