12 oz bowtie pasta (farfalle)

14 oz smoked sausage, sliced into coins

1 tablespoon olive oil

1 red bell pepper, diced

1 teaspoon Cajun seasoning (or to taste)

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

2 cups chicken broth

1 cup heavy cream

1/2 cup diced tomatoes (drained)

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a deep skillet over medium heat. Add sausage and cook 4-5 minutes until browned.
  2. Stir in diced bell pepper and cook 2-3 more minutes.
