Ingredients

Scale

1 lb elbow macaroni (or similar pasta)

4 tbsp unsalted butter

4 tbsp all-purpose flour

3 cups whole milk

1 cup heavy cream

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt (to taste)

1/4 tsp ground black pepper

1/2 tsp mustard powder (optional)

3 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (for garnish)

Optional: 1/4 tsp paprika

Optional: Fresh basil leaves

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook macaroni until al dente, then drain and set aside.
  3. In a saucepan over medium heat, melt butter. Add flour and whisk for 1–2 minutes to make a roux.
  4. Slowly whisk in milk and cream. Stir constantly until thickened (about 5 minutes).
  5. Add garlic powder, onion powder, mustard powder, salt, and pepper.
  6. Reduce heat and stir in 2 1/2 cups of cheddar, mozzarella, and Parmesan (save some for topping).
  7. Mix the cooked pasta with the cheese sauce until fully coated.
  8. Pour mixture into prepared baking dish. Top with remaining cheese and paprika if using.
  9. Bake uncovered for 20–25 minutes until bubbly and golden. Broil for 2–3 minutes for a crispier top.
  10. Let rest for 5–10 minutes. Garnish with parsley and basil. Serve warm.
