Ingredients
For the Meatloaf:
2 lbs ground beef (80/20)
1 cup breadcrumbs
1 medium onion, finely chopped
2 cloves garlic, minced
2 eggs
1/2 cup milk
2 tbsp Worcestershire sauce
2 tbsp ketchup
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
For the Mushroom Gravy:
2 tbsp butter
1 tbsp olive oil
8 oz mushrooms, sliced
1 small onion, finely chopped
1 clove garlic, minced
2 tbsp flour
2 cups beef broth
1 tsp Worcestershire sauce
Salt and pepper to taste
Optional: splash of heavy cream
Instructions
- Preheat oven to 375°F (190°C). Prepare a loaf pan or lined baking tray.
- Mix ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire, ketchup, salt, pepper, and thyme in a bowl until just combined.
- Shape into a loaf and place in prepared pan. Bake for 50–60 minutes or until internal temp reaches 160°F (71°C).
- Rest meatloaf for 10 minutes before slicing.
- While baking, heat butter and oil in skillet. Sauté mushrooms 5–7 mins until browned. Add onion and garlic; cook 2–3 mins.
- Stir in flour; cook 1–2 mins. Slowly add broth while stirring to prevent lumps.
