12 oz linguine or fettuccine

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

Salt and pepper to taste

3 cloves garlic, minced

1 tsp red pepper flakes (optional for spice)

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning


Notes

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season shrimp, then cook 1-2 minutes per side. Remove and set aside.
  3. Lower heat to medium, add garlic and red pepper flakes. Sauté for 30 seconds.
  4. Add sun-dried tomatoes, cook for 1 minute.
  5. Pour in chicken broth and cream. Stir, then add Parmesan and Italian seasoning. Simmer 3-4 minutes.
  6. Add shrimp and pasta back to the skillet. Toss to coat and heat through.
