Ingredients

1 cup white chocolate chips or finely chopped white chocolate

3 tbsp unsalted butter

1/4 cup heavy cream

2 tbsp freshly squeezed lemon juice

1 tbsp lemon zest (plus extra for garnish, optional)

1/2 tsp vanilla extract

1/8 tsp salt

Powdered sugar (for coating)

Additional melted white chocolate for dipping (optional)


Instructions

  1. In a heatproof bowl, melt white chocolate and butter in 15-second intervals in the microwave, stirring between each, or melt using a double boiler.
  2. Stir in heavy cream, lemon juice, lemon zest, vanilla, and salt until smooth.
  3. Cover and refrigerate for at least 2 hours until firm.
  4. Scoop and roll into 1-inch balls; place on a parchment-lined tray.
  5. Roll truffles in powdered sugar or dip in melted white chocolate and then coat with sugar again if desired.
  6. Serve immediately or store in an airtight container in the fridge.
