Ingredients
2 cups leftover mashed potatoes (cold and firm)
1 cup shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup sour cream or plain Greek yogurt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper to taste
2 tablespoons chopped chives (plus more for garnish)

Instructions
