Cake Batter:

1 cup (225g) unsalted butter, softened

1 cup (200g) granulated sugar

4 large eggs

2 cups (250g) all-purpose flour

2 tsp baking powder

Zest of 2 lemons

Juice of 1 lemon

1/4 cup (60ml) milk

Lemon Glaze:

Juice of 2 lemons

3/4 cup (150g) granulated sugar


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, beat butter and sugar until pale and fluffy.
  3. Add eggs one at a time, mixing thoroughly after each.
  4. Sift in flour and baking powder, then gently fold into the batter.
  5. Stir in lemon zest, juice, and milk until smooth.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 35–40 minutes, or until a toothpick comes out clean.
  8. While baking, mix lemon juice and sugar for the glaze.
  9. Once baked, poke holes all over the cake and drizzle glaze on top.
  10. Cool completely, slice into squares, and enjoy!
