Ingredients
Cake Batter:
1 cup (225g) unsalted butter, softened
1 cup (200g) granulated sugar
4 large eggs
2 cups (250g) all-purpose flour
2 tsp baking powder
Zest of 2 lemons
Juice of 1 lemon
1/4 cup (60ml) milk
Lemon Glaze:
Juice of 2 lemons
3/4 cup (150g) granulated sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, beat butter and sugar until pale and fluffy.
- Add eggs one at a time, mixing thoroughly after each.
- Sift in flour and baking powder, then gently fold into the batter.
- Stir in lemon zest, juice, and milk until smooth.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick comes out clean.
- While baking, mix lemon juice and sugar for the glaze.
- Once baked, poke holes all over the cake and drizzle glaze on top.
- Cool completely, slice into squares, and enjoy!
