Ingredients
1 cup graham cracker crumbs (optional)
2 tbsp unsalted butter, melted
1 cup cream cheese, softened
1/3 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 tsp lime zest
1 tbsp lime juice
1/2 cup sour cream
1 cup fresh blueberries (plus more for topping)
1 box vanilla cupcake mix (plus ingredients on box)
1/2 cup blueberry preserves or jam
Green fondant or candy (optional garnish)
Instructions
- Optional base: Mix graham cracker crumbs and butter. Press into cupcake liners. Pre-bake at 325°F for 5 minutes.
- Make cheesecake mix: Beat cream cheese, sugar, egg, vanilla, lime zest and juice, and sour cream until creamy.
- Prepare cupcake mix according to box.
- Fill liners halfway with cupcake batter. Add 1 tbsp cheesecake mix and a few blueberries. Swirl gently.
- Bake at 350°F for 20-22 minutes. Cool completely.
- Top with blueberry preserves, extra berries, and optional garnish.
