4 cups fresh blackberries (or thawed from frozen)

1 cup granulated sugar (plus extra for topping)

1 tbsp lemon juice

1 tsp vanilla extract

1/2 cup water

1 tbsp cornstarch

1 1/2 cups all-purpose flour

1/2 cup cold unsalted butter (cut into cubes)

1 tbsp baking powder

1/2 tsp salt

1/2 cup milk (plus 1 tbsp if needed)

1 egg (for egg wash)


Instructions

  1. In a saucepan, combine blackberries, sugar, lemon juice, and vanilla extract. Cook over medium heat until juices release (5–7 minutes).
  2. Mix cornstarch with water, then stir into berry mixture. Simmer 2–3 minutes until slightly thickened. Set aside.
