For the Cupcakes:

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/2 tsp vanilla extract

1/2 cup grape soda

1/4 cup milk

For the Grape Frosting:

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

1/4 cup grape soda

Purple food coloring (optional)

Garnish: mint leaves or grape candies (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Mix in half of the dry ingredients, followed by grape soda and milk, then the rest of the dry mix. Don’t overmix.
  6. Divide batter evenly among cupcake liners. Bake for 18-20 minutes.
  7. Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat butter until creamy. Add powdered sugar gradually, alternating with grape soda. Add food coloring if desired.
  9. Frost cooled cupcakes and decorate with optional toppings.
