1 9-inch pie crust (pre-baked and cooled)

1 cup granulated sugar

1/3 cup unsweetened cocoa powder

1/4 cup cornstarch

1/4 tsp salt

2 3/4 cups whole milk

3 large egg yolks (lightly beaten)

2 tbsp unsalted butter

1 1/2 tsp vanilla extract

Whipped topping or meringue for garnish


Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Gradually add milk while whisking until smooth.
  3. Place over medium heat, stirring constantly, until the mixture thickens and bubbles (about 8–10 minutes).
  4. In a small bowl, lightly beat the egg yolks. Slowly add a few spoonfuls of the hot mixture into the yolks while whisking.
  5. Return the tempered yolk mixture to the saucepan and continue cooking for 2–3 minutes until thick.
  6. Remove from heat and stir in butter and vanilla extract.
  7. Pour the filling into the pre-baked pie crust and smooth the top.
  8. Cool at room temperature for 30 minutes, then chill in the fridge for at least 4 hours.
  9. Before serving, top with whipped topping or meringue
