4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup all-purpose flour

2 large eggs, beaten

1 1/2 cups breadcrumbs (panko or Italian-style)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup chopped parsley (optional)

Oil for frying (vegetable or canola)


Instructions

  1. Slice each chicken breast in half horizontally to make thin cutlets.
  2. Pound them to an even 1/2 inch thickness and season with salt, pepper, garlic powder, and paprika.
  3. Dredge cutlets in flour, dip in eggs, and coat in breadcrumbs.
  4. Heat oil in a skillet over medium heat. Fry each cutlet 3-4 minutes per side until golden and cooked through.
