4 boneless, skinless chicken breasts

1 teaspoon garlic powder
1 teaspoon smoked paprika
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups breadcrumbs (panko or Italian-style)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley (optional)
Oil for frying (vegetable or canola)
Instructions
- Slice each chicken breast in half horizontally to make thin cutlets.
