12 oz rigatoni pasta

1 lb sirloin steak, cut into bite-sized cubes

3 tbsp unsalted butter

4 cloves garlic, minced

1/2 tsp crushed red pepper flakes (optional)

1/2 cup grated Parmesan cheese (plus more for topping)

2 tbsp chopped fresh parsley

Salt and black pepper, to taste

1 tbsp olive oil (for searing steak)


Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1/2 cup pasta water, then drain.
  2. While pasta cooks, heat olive oil in a skillet over medium-high. Pat steak dry, season with salt and pepper, then sear for 2–3 minutes per side. Remove from pan.
  3. Lower heat to medium. Add butter to the same skillet. Once melted, stir in garlic and red pepper flakes. Cook for about 1 minute.
  4. Return pasta to the skillet. Add reserved pasta water and toss to coat. Add steak and Parmesan, stir gently until combined.
  5. Garnish with chopped parsley and extra Parmesan. Serve hot.
