Eggroll in a Bowl

Ingredients

  • 1 lb ground pork, chicken, or turkey
  • 3 cups shredded cabbage
  • 1 cup matchstick carrots
  • 1 cup broccoli slaw (optional)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce (or coconut aminos)
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • Sriracha and sesame seeds (optional)

Instructions

 

  1. Heat sesame oil in a large skillet over medium heat. Cook the ground meat until browned, then set aside.
  2. In the same skillet, sauté garlic and ginger until fragrant. Add cabbage, carrots, and broccoli slaw. Stir-fry for 4-5 minutes.
  3. Return the cooked meat to the skillet. Stir in soy sauce and combine well. Add sriracha if desired.
  4. Garnish with green onions and sesame seeds. Serve warm!
