2 cups grated potatoes (squeezed to remove excess water)

1 cup grated carrots

1 cup zucchini, grated and drained

½ cup finely chopped onion

2 cloves garlic, minced

½ cup breadcrumbs (or oat flour for a gluten-free option)

¼ cup chopped fresh parsley or cilantro

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

½ teaspoon cumin (optional)

1 egg (or flax egg for a vegan option)

2 tablespoons olive oil (for frying)


Instructions

  1. Prepare the vegetables: Grate the potatoes, carrots, and zucchini. Squeeze out excess water from the potatoes and zucchini.
  2. Mix the ingredients: In a large bowl, combine the grated vegetables, onion, garlic, breadcrumbs, parsley, salt, black pepper, paprika, cumin, and egg. Mix well and let sit for 5 minutes.
  3. Shape the patties: Take a handful of the mixture and form into small patties, about ½ inch thick. If the mixture is too wet, add more breadcrumbs.
  4. Cook the patties: Heat olive oil in a skillet over medium heat. Cook each patty for 3-4 minutes per side until golden brown and crispy.
  5. Serve and enjoy: Remove from heat and serve with your favorite dip or side dish.
