Ingredients

1 1/2 lbs boneless, skinless chicken thighs or breasts

Salt and pepper to taste

2 tablespoons olive oil

1 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger (optional)

1 cup diced bell peppers (red, yellow, or orange)

1/2 cup chopped green onions

1 tablespoon sesame seeds


Instructions

  1. Pat chicken dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet on medium-high. Cook chicken 5-6 minutes per side. Remove and set aside.
  3. Add bell peppers to the same pan and cook 2-3 minutes.
  4. Lower heat and stir in sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Simmer 2 minutes.
  5. Return chicken to pan, coat with sauce, and simmer 2-3 more minutes.
