Packed with colorful layers of cheese cubes, salami slices, crunchy pickles, and vibrant bell peppers, all marinated in a flavorful herb-infused dressing, it’s an ideal make-ahead dish for gatherings, charcuterie boards, or even as a delightful snack.

  • 2 cups semi-firm cheese cubes (such as cheddar, Gouda, or Havarti)
  • 1 cup thick-sliced salami rounds
  • 1 cup mini pickles (cornichons or dill pickles)
  • 1/2 cup diced red, yellow, or orange bell peppers
  • 1/4 cup chopped fresh parsley or dill
  • 1/3 cup olive oil
  • 2 tbsp white wine vinegar (or apple cider vinegar)
  • 1 clove garlic, minced
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cut the cheese into bite-sized cubes and the bell peppers into small pieces. If using larger pickles, slice them in half or quarters.
  2. In a large jar or container, layer the cheese cubes, salami slices, pickles, and bell peppers, alternating the layers for even distribution.
  3. In a small bowl, whisk together olive oil, vinegar, minced garlic, black pepper, and red pepper flakes. Stir in the chopped fresh herbs.
  4. Pour the marinade over the layered ingredients in the jar. Gently press down to ensure everything is coated evenly.
  5. Seal the jar tightly and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  6. Before serving, give the jar a gentle shake or stir. Serve directly from the jar with toothpicks or pour onto a platter for a colorful presentation.

Notes

  • For extra crunch, add roasted almonds or walnuts just before serving.
  • If the olive oil solidifies in the refrigerator, let the jar sit at room temperature for 15 minutes before serving.
  • This appetizer can be stored in an airtight container in the refrigerator for up to 5 days.
