Ingredients
Scale
- 2 cups semi-firm cheese cubes (such as cheddar, Gouda, or Havarti)
- 1 cup thick-sliced salami rounds
- 1 cup mini pickles (cornichons or dill pickles)
- 1/2 cup diced red, yellow, or orange bell peppers
- 1/4 cup chopped fresh parsley or dill
- 1/3 cup olive oil
- 2 tbsp white wine vinegar (or apple cider vinegar)
- 1 clove garlic, minced
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cut the cheese into bite-sized cubes and the bell peppers into small pieces. If using larger pickles, slice them in half or quarters.
- In a large jar or container, layer the cheese cubes, salami slices, pickles, and bell peppers, alternating the layers for even distribution.
- In a small bowl, whisk together olive oil, vinegar, minced garlic, black pepper, and red pepper flakes. Stir in the chopped fresh herbs.
- Pour the marinade over the layered ingredients in the jar. Gently press down to ensure everything is coated evenly.
- Seal the jar tightly and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Before serving, give the jar a gentle shake or stir. Serve directly from the jar with toothpicks or pour onto a platter for a colorful presentation.
Notes
- For extra crunch, add roasted almonds or walnuts just before serving.
- If the olive oil solidifies in the refrigerator, let the jar sit at room temperature for 15 minutes before serving.
- This appetizer can be stored in an airtight container in the refrigerator for up to 5 days.
