12 oz spaghetti, cooked al dente

2 cups cooked chicken breast, chopped or shredded

2 tablespoons butter

1 small onion, diced

2 cloves garlic, minced

8 oz mushrooms, sliced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1/2 cup chicken broth

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook spaghetti until al dente, drain, and set aside.
  3. In a skillet, melt butter. Sauté onion for 3-4 minutes, then add garlic and mushrooms. Cook until mushrooms are browned.
