Carrot Cake Bars:

1 1/4 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup vegetable oil

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups finely grated carrots

1/2 cup crushed pineapple, drained

1/2 cup chopped pecans (optional)

Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment or grease it lightly.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat oil, brown sugar, granulated sugar, eggs, and vanilla until creamy.
  4. Fold in grated carrots and pineapple.
  5. Add dry mixture to wet, stirring until just combined. Stir in pecans if using.
