3 large eggs

1 cup buttermilk

1/2 cup shredded sweetened coconut

1/2 cup crushed pineapple (with juice)

1/2 cup brown sugar

1/4 cup chopped pecans or walnuts (optional)

1/2 cup chocolate chips or cocoa swirl mix (optional)

1 can sweetened condensed milk

1/2 cup caramel sauce (store-bought or homemade)

Fresh blackberries or cherries for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan.
  2. In a large bowl, mix together the yellow cake mix, eggs, buttermilk, vegetable oil, and vanilla extract. Beat until smooth and fluffy.
  3. Fold in coconut, pineapple, brown sugar, and nuts. Add chocolate chips or swirl in cocoa mix for the tornado effect.
