Ingredients

Scale

4 boneless, skinless chicken breasts

2 cups shredded sharp cheddar cheese

1 sleeve Ritz crackers (about 3035 crackers), crushed

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper, to taste

2 eggs

2 tablespoons milk

2 tablespoons butter, melted

Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line and grease a baking dish.
  2. If needed, slice chicken breasts in half lengthwise for even cooking.
  3. In a shallow bowl, beat eggs and milk. Place cheese in a second bowl and mix cracker crumbs with spices in a third bowl.
  4. Dip each chicken breast in egg wash, then press into cheese, then coat in cracker mixture.
  5. Arrange in prepared dish and drizzle with melted butter.
  6. Bake for 25–30 minutes or until chicken is cooked through and crust is golden. Broil for 2–3 minutes at the end if desired.
  7. Rest for a few minutes. Garnish with parsley and serve hot.
