1.5 lbs boneless, skinless chicken thighs or breasts

1 tbsp olive oil

2 tbsp unsalted butter

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp onion powder

1/2 tsp crushed red pepper flakes (optional)

Salt and pepper to taste

1/2 cup chicken broth

1/3 cup sliced pepperoncini (plus 12 tbsp of the brine)

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Pat chicken dry and season with salt, pepper, oregano, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4-5 minutes per side. Set aside.
  3. Lower heat to medium. Melt butter, add garlic and red pepper flakes. Cook for 30 seconds.
  4. Pour in chicken broth, scraping up any browned bits.
  5. Stir in sliced pepperoncini and brine. Simmer for 1-2 minutes.
  6. Add heavy cream, stir in Parmesan. Simmer until sauce thickens.
  7. Return chicken to skillet. Spoon sauce over and simmer 2-3 minutes.
  8. Garnish with parsley. Serve hot.
