1 package (about 9 oz) refrigerated mushroom ravioli

1 tablespoon olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 small shallot, finely chopped

8 oz cremini mushrooms, sliced

1/2 cup dry white wine (or vegetable broth)

3/4 cup heavy cream

1/4 cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

1 teaspoon fresh thyme leaves (or 1/4 tsp dried thyme)

Chopped fresh parsley, for garnish

Extra Parmesan, for topping


Instructions

  1. Bring a large pot of salted water to a boil. Cook the ravioli according to the package until al dente. Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium heat. Add garlic and shallot; cook for 1 minute until fragrant.
  3. Stir in sliced mushrooms. Sauté 6–8 minutes until golden and tender.
  4. Deglaze the pan with wine or broth, scraping the bottom. Simmer 2–3 minutes.
  5. Reduce heat. Stir in cream, Parmesan, salt, pepper, and thyme. Simmer 3–4 minutes to thicken.
  6. Add ravioli to the sauce. Toss gently. Add a splash of pasta water if needed.
  7. Plate and garnish with parsley and extra cheese. Serve hot.
