Ingredients
1 lb (450g) cheese tortellini (fresh or frozen)
1/2 lb (225g) Italian sausage (mild or spicy, casings removed)
1 1/2 cups broccoli florets (cut into bite-sized pieces)
2 tbsp butter
4 cloves garlic (minced)
1 cup heavy cream
1 cup grated parmesan cheese
1/2 cup chicken broth
1/2 tsp red pepper flakes (optional)
1/2 tsp black pepper
Salt to taste
1/2 tsp Italian seasoning
1/4 tsp nutmeg (optional)
1/2 cup milk (if needed to thin the sauce)
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions. Two minutes before it’s done, add the broccoli. Drain and set aside.
- Cook the Sausage: In a large skillet over medium heat, cook the sausage, breaking it into pieces, until browned and fully cooked. Drain excess grease and set aside.
- Prepare the Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in chicken broth, then lower heat and add heavy cream, parmesan, black pepper, Italian seasoning, nutmeg (if using), and red pepper flakes. Stir until smooth.
- Combine Ingredients: Return the cooked sausage to the skillet, then fold in the tortellini and broccoli. Stir well to coat everything in the creamy sauce. Simmer for 2–3 minutes, adjusting seasoning as needed.
- Serve & Enjoy: Remove from heat and serve immediately. Garnish with extra parmesan cheese and red pepper flakes if desired.
