2 tablespoons olive oil

1 lb boneless, skinless chicken breast (cut into bite-sized chunks)

1 lb smoked sausage (sliced)

2 teaspoons ranch seasoning mix

Salt and black pepper to taste

3 cups uncooked rotini or penne pasta

2 cups chicken broth

1 ½ cups heavy cream

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 tablespoons cream cheese

Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken, season with salt, pepper, and half the ranch mix. Cook until golden and cooked through. Remove and set aside.
  3. Add smoked sausage to the skillet, sear for 3–4 minutes until browned. Remove and set aside.
  4. Pour in chicken broth and heavy cream, then stir in uncooked pasta.
  5. Bring to a simmer, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is al dente.
  6. Stir in cream cheese until melted.
  7. Add cheddar and mozzarella cheese, stirring until fully melted and creamy.
  8. Return chicken and sausage to the skillet and stir to combine. Simmer for 2–3 more minutes.
  9. Garnish with parsley if desired and serve hot.
