Ingredients
2 tablespoons olive oil
1 lb boneless, skinless chicken breast (cut into bite-sized chunks)
1 lb smoked sausage (sliced)
2 teaspoons ranch seasoning mix
Salt and black pepper to taste
3 cups uncooked rotini or penne pasta
2 cups chicken broth
1 ½ cups heavy cream
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
2 tablespoons cream cheese
Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken, season with salt, pepper, and half the ranch mix. Cook until golden and cooked through. Remove and set aside.
- Add smoked sausage to the skillet, sear for 3–4 minutes until browned. Remove and set aside.
- Pour in chicken broth and heavy cream, then stir in uncooked pasta.
- Bring to a simmer, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is al dente.
- Stir in cream cheese until melted.
- Add cheddar and mozzarella cheese, stirring until fully melted and creamy.
