12 oz bowtie pasta (farfalle)

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp Cajun seasoning (divided)

2 tbsp olive oil

1 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Additional Parmesan for topping (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente. Drain and set aside.
  2. Toss chicken pieces with 1 tbsp Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high. Sear chicken until golden and cooked through, about 6-8 minutes. Remove and set aside.
  4. Lower heat to medium. Add butter and garlic to the skillet; sauté for 30 seconds.
  5. Stir in remaining Cajun seasoning, paprika, chicken broth, and cream. Simmer for 2-3 minutes.
  6. Add cooked pasta and chicken back into the skillet. Stir in Parmesan until creamy and combined.
  7. Garnish with parsley and extra cheese if desired. Serve hot.
