1215 mini sweet peppers, halved and deseeded

8 oz (225g) cream cheese, softened

1/2 cup shredded cheddar or mozzarella (optional)

1 garlic clove, minced

1 tsp onion powder

1 tbsp fresh parsley or chives, finely chopped

Salt and black pepper to taste

Optional: red pepper flakes or a drizzle of honey


Instructions

  1. Wash and halve the mini sweet peppers, removing seeds and membranes. Pat dry.
  2. In a mixing bowl, combine softened cream cheese, shredded cheese, garlic, onion powder, herbs, salt, and pepper. Mix until smooth.
  3. Spoon or pipe the filling into each pepper half. Smooth the tops with a spoon or knife.
