Ingredients
2 heads of garlic, cloves peeled
2 tablespoons olive oil
1 tablespoon butter
1 large leek, cleaned and sliced (white and light green parts)
2 medium Yukon gold potatoes, thinly sliced
4 cups vegetable broth (or chicken broth)
1 cup heavy cream (optional)
Salt and freshly ground black pepper, to taste
Fresh thyme sprigs (plus extra for garnish)
Crusty bread, for serving
Instructions
- Preheat oven to 375°F (190°C). Place garlic cloves on a tray with olive oil and roast for 25–30 minutes until golden and soft.
- In a large pot, heat butter and remaining olive oil. Sauté leeks with a pinch of salt for 5–7 minutes until soft.
- Add roasted garlic and sliced potatoes. Stir and cook for 2 minutes.
- Pour in broth and add thyme. Simmer for 20–25 minutes until potatoes are tender.
- Blend part or all of the soup for desired consistency. Stir in cream if using.
- Season with salt and pepper. Simmer another 2–3 minutes.
