2 tablespoons olive oil

1 large onion, finely chopped

2 carrots, peeled and diced

2 celery stalks, diced

4 garlic cloves, minced

1 pound ground beef (85/15)

1/2 pound ground pork (optional)

1/4 cup tomato paste

1 cup whole milk

1 cup dry white wine

1 (28 oz) can crushed tomatoes

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley, for garnish

Grated Parmesan, for serving


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Cook until soft (8-10 min). Stir in garlic.
  2. Add ground beef (and pork if using). Cook until browned. Season with salt and pepper.
  3. Stir in tomato paste. Cook 2-3 minutes. Deglaze with wine and simmer until mostly evaporated.
  4. Add crushed tomatoes, milk, oregano, and red pepper flakes. Simmer uncovered on low for 1.5–2 hours, stirring occasionally.
  5. Adjust seasoning. Stir in chopped basil or parsley. Serve hot over pasta with Parmesan.
