2 cups rotini or fusilli pasta (uncooked)

2 tablespoons olive oil

2 chicken breasts, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups fresh broccoli florets

1 cup heavy cream

3/4 cup milk

1 packet ranch seasoning mix

1 1/2 cups shredded cheddar cheese

1/2 cup shredded mozzarella cheese

Optional: red pepper flakes or chopped parsley


Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high. Add diced chicken, season with garlic powder, onion powder, salt, and pepper. Cook until golden and fully done.
  3. Add broccoli to the skillet and cook 3–4 minutes until slightly tender.
  4. Reduce heat. Stir in cream, milk, and ranch seasoning. Simmer 2–3 minutes.
  5. Add cheddar and mozzarella cheese. Stir until melted and sauce is creamy.
  6. Fold in cooked pasta. Let everything simmer another 2–3 minutes.
  7. Taste and adjust seasoning. Garnish with red pepper flakes or parsley if desired.
