1 small onion, finely chopped

3 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 ½ cups shredded provolone cheese

1 cup Parmesan cheese, grated (for sauce and garnish)

1 tsp Worcestershire sauce

Salt and pepper to taste

1 lb cheese tortellini (fresh or frozen)

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced beef, season with salt and pepper, and cook for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  2. Sauté the Aromatics: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and sauté for another 30 seconds until fragrant.
  3. Create the Sauce: Pour the beef broth into the skillet, stirring to deglaze the pan. Let it simmer for 2-3 minutes. Lower the heat and add the heavy cream, stirring well. Gradually add the shredded provolone cheese, stirring constantly until smooth and creamy. Stir in the Worcestershire sauce for extra flavor.
  4. Cook the Tortellini: While the sauce simmers, cook the tortellini according to package instructions. Drain well.
  5. Combine and Serve: Return the cooked beef to the skillet and stir it into the sauce. Add the cooked tortellini and toss everything together to coat. Sprinkle with grated Parmesan and chopped parsley before serving
