2 large chicken breasts, sliced
1 tablespoon olive oil
1 tablespoon Cajun seasoning (plus more for garnish)
Salt and pepper to taste
For the Pasta & Sauce:
8 oz penne pasta
2 tablespoons butter
4 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup heavy cream
1/2 cup whole milk
1 cup freshly grated Parmesan cheese
1/2 teaspoon paprika
Salt and black pepper, to taste
Garnish:
Fresh parsley, chopped
Extra Parmesan for serving
Instructions
- Bring salted water to a boil, cook penne pasta until al dente, then drain.
- Heat olive oil in a skillet. Season chicken with Cajun seasoning, salt, and pepper. Sear on medium-high heat until cooked through. Set aside.
