Ingredients

1 cup fresh blueberries (plus extra for topping)

1 cup almond flour

1/2 cup vanilla or plain protein powder

1/4 cup softened cream cheese

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

1 tablespoon melted coconut oil

Pinch of sea salt

Optional: melted white chocolate or yogurt for drizzle


Instructions

  1. Blend the fresh blueberries in a food processor until mostly smooth.
  2. In a large bowl, combine almond flour, protein powder, and sea salt.
  3. Add blended blueberries, cream cheese, maple syrup, vanilla, and coconut oil.
  4. Mix until a thick, sticky dough forms.
  5. Chill dough in the fridge for 15–20 minutes if too soft.
  6. Roll into 1-tablespoon-sized balls using your hands.
  7. Place bites on a parchment-lined tray.
  8. Top each bite with a fresh blueberry and drizzle with white chocolate or yogurt if desired.
  9. Refrigerate for 30 minutes to firm up.
