Ingredients

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

3 cups cooked black beans (or two 15-oz cans, rinsed and drained)

3 cups vegetable broth

1 cup diced tomatoes

1 tablespoon lime juice

Optional toppings: sour cream, red onion, diced tomatoes, cilantro, lime wedges


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until soft.
  2. Stir in garlic and bell pepper. Cook for 2–3 more minutes.
  3. Add cumin, paprika, chili powder, salt, and pepper. Stir and let the spices toast for 1 minute.
  4. Pour in black beans, broth, and diced tomatoes. Stir well and bring to a boil.
  5. Lower heat and simmer uncovered for 20 minutes.
  6. (Optional) Blend part of the soup with an immersion blender for creaminess.
  7. Stir in lime juice. Adjust seasoning as needed.
  8. Serve hot with your favorite toppings and a side of chips or bread.
