These Beef Tips with Mushrooms are the ultimate comfort food. Tender chunks of beef are simmered in a savory, mushroom-infused gravy until melt-in-your-mouth delicious. Served over creamy mashed potatoes or noodles, this hearty dish is perfect for family dinners or special occasions.

  • 1 ½ lbs beef tips (sirloin tips, stew meat, or chuck roast), cut into bite-sized pieces
  • 8 oz mushrooms, thickly sliced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • ½ cup red wine (optional; substitute with broth if desired)
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Fresh thyme (optional)
  • Fresh parsley, for garnish

Instructions

 

  1. Heat olive oil and butter in a large skillet over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Remove and set aside.
  2. In the same skillet, sauté mushrooms and onion until softened, about 5-7 minutes. Stir in garlic and cook for 1 minute.
  3. Sprinkle flour over the mixture, stir well, and cook for 1-2 minutes.
  4. Gradually whisk in beef broth, red wine (if using), Worcestershire sauce, and thyme. Bring to a simmer.
  5. Add the seared beef back to the skillet, reduce heat to low, cover, and simmer for 1.5-2 hours, stirring occasionally.
  6. Serve hot over mashed potatoes, rice, or egg noodles. Garnish with fresh parsley if desired.

Notes

 

  • For a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of water and add during the last 10 minutes of cooking.
  • Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
  • Pair with a side of steamed vegetables or a fresh green salad for a complete meal.
