- 1 ½ lbs beef tips (sirloin tips, stew meat, or chuck roast), cut into bite-sized pieces
- 8 oz mushrooms, thickly sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- ½ cup red wine (optional; substitute with broth if desired)
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh thyme (optional)
- Fresh parsley, for garnish
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Remove and set aside.
- In the same skillet, sauté mushrooms and onion until softened, about 5-7 minutes. Stir in garlic and cook for 1 minute.
- Sprinkle flour over the mixture, stir well, and cook for 1-2 minutes.
- Gradually whisk in beef broth, red wine (if using), Worcestershire sauce, and thyme. Bring to a simmer.
- Add the seared beef back to the skillet, reduce heat to low, cover, and simmer for 1.5-2 hours, stirring occasionally.
- Serve hot over mashed potatoes, rice, or egg noodles. Garnish with fresh parsley if desired.
Notes
- For a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of water and add during the last 10 minutes of cooking.
- Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
