Ingredients
1 lb (450g) rigatoni or any short pasta
1 lb (450g) beef stew meat or sirloin, cut into bite-sized pieces
1 tbsp olive oil
1 tbsp butter
4 cloves garlic, minced
1 small onion, finely chopped
1 tsp dried Italian herbs (oregano, thyme, basil)
Salt and freshly ground black pepper, to taste
1 cup heavy cream
1/2 cup beef broth
1/2 cup grated Parmesan cheese
1 tsp Worcestershire sauce (optional)
Fresh parsley or thyme, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium-high heat. Sear the beef until browned on all sides, about 5–7 minutes. Remove and set aside.
- Lower the heat to medium and add butter to the same skillet. Sauté the onion until translucent, then add the minced garlic and cook for 30 seconds.
- Pour in the beef broth to deglaze the pan, scraping up the browned bits. Add the heavy cream, Parmesan, Italian herbs, Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes until slightly thickened.
- Return the beef and pasta to the pan. Toss everything to coat in the sauce. Add a splash of reserved pasta water if needed to adjust consistency.
