Ingredients

2 cups dry elbow macaroni

1 lb boneless skinless chicken breast, diced

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

Salt & pepper to taste

1 cup white cheddar cheese, shredded

1/2 cup whole milk or heavy cream

1/4 cup BBQ sauce

2 tbsp chipotle peppers in adobo sauce, finely chopped

1/4 cup ranch dressing

1 tbsp butter

Fresh parsley or green onions, chopped (optional garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook macaroni until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high. Season chicken with paprika, garlic powder, salt, and pepper. Cook until browned and done. Remove from heat.
  3. In a saucepan, melt butter over medium-low. Add milk or cream, and bring to a gentle simmer.
  4. Slowly stir in shredded cheddar until smooth and melted.
  5. Add BBQ sauce, chipotle peppers, and ranch dressing. Stir well and taste for seasoning.
  6. Mix in the cooked pasta and chicken. Fold everything together to coat evenly in sauce.
  7. Serve warm, garnished with chopped parsley or green onions.
