Ingredients
2 large apples (Granny Smith or Honeycrisp), peeled, cored, diced
2 tbsp unsalted butter
1/4 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp lemon juice
1 tbsp cornstarch (optional)
1 package empanada dough discs (or homemade dough)
1 egg (for egg wash)
Granulated sugar (optional, for sprinkling)
Instructions
- In a saucepan, melt butter and add diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook 5–7 minutes until soft. Add cornstarch if needed and cool.
- Preheat oven to 375°F (190°C). Line baking sheet with parchment. Soften store-bought dough or roll out homemade dough into 4–5 inch rounds.
- Spoon apple filling into center of each dough circle. Fold over and seal edges.
- Crimp edges with a fork and cut a slit on top for steam.
- Brush tops with egg wash and sprinkle with sugar if desired.
- Bake for 20–25 minutes until golden brown.
